Sustainable
By the way… did you know,
■
Not only does the vitellone/young beef come from the region, but the
lamb, vegetables, potatoes, cheese, and much more also come from
natural production in the region.
■
Our “short distances and circular thinking” approach is not only applied to
purchasing goods. It can be applied to the entire business.
■
Not only are the tablecloths hand-woven in our own weaving workshop,
but so is the sun canopy on the facade of the building.
■
The wood for the long wooden tables on the upper terrace comes from the
local forest. We cut it in our own sawmill,
planed and processed it ourselves, which gives us a completely different relationship to it.
■
that our own forest has a special meaning for us. A
considerable part of the firewood for our wood chip heating system
comes from there.
■
that the hot water in our business is largely heated by
thermal solar collectors.
■
that we not only have our own mechanical-biological wastewater treatment plant, but also
our own private water supply with two springs.
■
that we are connected to the municipal power supply and obtain
“renewable energy from hydropower” there. This is also where the
energy for our electric car comes from, which is not only welcome when gasoline prices are rising.
■
that we produce almost half of the electricity we need ourselves using a new
water supply with a micro hydropower plant, which
corresponds to electricity for 3 to 4 households.
■
that at our sawmill, we not only cut wood for our own use,
but also carry out contract cutting for the community and local
wood processing companies, thus helping to promote
circular thinking in the region.
